Recipe: How to Make your Muffins Fancy and Exciting

The kitchen has been therapeutic for me during this pandemic season. I have found peace in cooking, but what excites me more is mixing art with delicacies. 

Today, let’s explore how to “fancy up” your muffins. I made this yesterday and decided to write this. Let me show you how to add a bit of orange to your muffins, put a deluxe graham crumb topping on them or cover them with cream cheese. You can try this with your Apple Oat Muffins or any recipe you love.

Orange Muffins

Pick a recipe that uses baking powder or baking soda as a leavening agent. Baking soda is alkaline and requires an acid to form the chemical reaction that sparks the bubbles. Indian buttermilk is the acid most commonly used. Since orange juice is an acid, you can use that by replacing buttermilk. Include a streusel topping and put one tablespoon of orange zest.

Here is a streusel topping mix that works well.

Orange Nut Streusel Topping


  • 1 cup walnut pieces
  • 1 cup brown sugar
  • 2 tablespoon zest from one large orange
  • 1 tablespoon cold butter
  • 1/2 teaspoon cinnamon


  1. Mince the walnuts into small pieces.
  2. Stir the nuts, cinnamon, brown sugar, and orange zest.
  3. Cut in the cold butter with a bread knife or 2 table knives.
  4. Spoon the streusel blend over the muffin batter equally before baking.

To put a deluxe graham crumb topping on your muffins.

Oat-Graham-Brown Sugar Topping


  • 1 cup brown sugar
  • 1/4 cup rolled oats
  • 2 sheets of crushed graham crackers
  • 1/2 teaspoon cinnamon
  • 6 tablespoons cold butter, sliced in pieces


  1. Blend the first four ingredients.
  2. Slice the butter in with a pastry knife.
  3. Spoon on top of the muffins.
  4. Bake as instructed.

Cream Cheese Frosting 


  • 225-gram cream cheese
  • 1/2 teaspoon lemon extract
  • 4 tablespoons flour
  • 1/3 cup sugar
  • 1 egg


  1. In a bowl, beat the cream cheese until fluffy
  2. Add the other ingredients and again proceed to beat until the blend becomes smooth and spot.
  3. Spoon the blend over the top of the muffins.

Bake as instructed. The topping will improve baking time by at least a few minutes. Be sure and test the cupcakes for doneness with a toothpick injected in the centre of the biggest muffin. If it does not come out clean, go on baking.
