This week, he has come up with a new recipe that he would like to share with us.
Simple Eats’ ‘No Bake’ Keto Energy Balls

INGREDIENTS
1 cup almond flour
3 cups unsweetened shredded coconut, set aside 1/2 cup to roll the dough
1/2 cup hemp seeds
1/2 cup semi-sweet chocolate chips
2/3 cup monk fruit sweetener
1/3 cup + 1 tbsp of unsweetened Coconut Milk
Place all the ingredients (except chocolate chips) in a food processor, and pulse a few times until the dough has begun to form. At this point, place the mixture in a medium size bowl. Using a rubber spatula continue forming the dough while adding the chocolate chips to the mix.
Use a 1.5 oz ice cream scooper, and your hands, to help form the dough into small ball shapes.
Roll the formed dough balls into the coconut flakes until all sides are thoroughly coated.
Place dough balls into an air tight food container, and place in the refrigerator for a minimum of 1 hour.
Enjoy!

Store in the refrigerator until ready to eat, as these dough balls hold together better when chilled. These delicious treats can last for up to a week in the refrigerator, and are a great healthy snack option to have on hand when you’re craving something sweet.
