Recipe for Spiced Fried Potatoes Dish (South Indian Aloo Fry)

Serves 3

Ingredients

For The South Indian Flavoured Powder (to be added while cooking the potatoes)

  • Dry coconut powder 2-3 tbsp
  • Garlic cloves 5
  • Cumin 1 tbsp
  • Dry red chillies 4
  • Salt to taste

For Cooking the Fried Potatoes

  • Potatoes 4 medium sized
  • Chilli powder to taste
  • Salt to taste
  • Oil 3 tbsp
  • Cumin 1 tbsp
  • Turmeric powder 1/2 tbsp
  • Onions 2 medium sized
  • Coriander powder 2 tbsp
  • Gram Flour (besan) 1 tbsp

Method

  1. In a Blender, put the dry red chillies, dry coconut powder, 1 tbsp cumin, garlic cloves and salt to taste.
  2. Blend it to a fine powder. Keep aside.
  3. Now take a regular sized pan and heat it on medium flame.
  4. Add 3 tbsp oil to it once the pan is hot.
  5. Let the oil heat for 3-4 minutes on medium-high flame and then add 1 tbsp cumin seeds to it. The oil should be hot enough so that the cumin seeds crackle a little
  6. Add finely chopped onions to it and sautee till they turn golden brown in colour
  7. Add turmeric powder to this
  8. Now add thinly chopped potato slices in the pan and continue to sautee.
  9. Cover the pan with a lid till and let it simmer on low flame, till the potatoes are half cooked (you can keep checking in between by poking a fork on the potatoes)
  10. Remove the lid, and once the potatoes are cooked till about 80%, add the blended powder we made initially.
  11. Also add coriander powder, gram flour and a pinch of chilli powder to the pan.
  12. Mix very well and let it fry till the potatoes turn a darker shade of brown.
  13. Serve hot and garnish with juliennes or coriander leaves!
