Recipe: How to Make Smoked Cottage Cheese Pizza Without The Pizza Base


(Makes 4 square slices)


For Pizza Sauce:

  • 1 tsp oil
  • 1 tbsp butter
  • 1 tsp cumin
  • 1 tbsp ginger-garlic paste
  • 1 medium sized onion chopped (small pieces)
  • 4 medium sized tomatoes
  • 2 tbsp cashew nut paste
  • 1 tbsp red chilli powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala (indian spice)
  • 1 tsp dried fenugreek leaves (kasuri methi in India)
  • 2 tbsp fresh cream
  • 1 tbsp coriander leaves
  • salt to taste

For Cottage Cheese:

  • 250 grams cottage cheese (Paneer in India)
  • 1/2 tsp Turmeric powder
  • 1 tbsp red chilli powder
  • 1 tsp cumin powder
  • 1 tbsp coriander powder
  • 1 tsp raw mango powder
  • 1/2 tsp black salt
  • 1 tsp dried fenugreek leaves
  • 2 tbsp melted butter
  • Clarified Butter (ghee)
  • Charcoal (3-4 small pieces of hot coal)

For Pizza:

  • Mozzarella Cheese (quantity should be decided such that each slice of bread which is being used as a pizza base should be fully topped with it)
  • 4 Cheese Slices
  • 8 slices of bread (rectangular shaped)
  • Handful of Extra Toppings as desired (baby corn/onions/mushroom/bell peppers/corn/etc)


  1. First, begin with making the Pizza Sauce.
  2. For the pizza sauce, take oil, butter and cumin in a pan. Sautee for a few seconds.
  3. Add ginger garlic paste to this.
  4. Now add the chopped onions to the pan and mix well with the ginger garlic paste.
  5. Once the onions turn translucent, add tomato puree to it. For tomato puree, just blanch 4 tomatoes and grind them along with pepper and few drops of water. The consistency of the puree should neither be too thick nor too watery. You can use store-bought tomato puree as well.
  6. After adding tomato puree, add cashew nut paste to the pan. For cashew nut paste, soak a handful of cashews in hot water till the water cools down, and grind them with water to get a medium-consistency paste.
  7. Now add red chilli powder, coriander powder and cook for 7-8 minutes.
  8. Add garam masala, dried fenugreek leaves. Stir well
  9. Now add fresh cream and coriander leaves and stir well.
  10. Keep aside for cooling down.
  11. Coming to the cottage cheese, cut it into cubes and put in a bowl
  12. Mix turmeric powder, red chilli powder, cumin powder, coriander powder, dry mango powder, black salt, dry fenugreek leaves in the bowl, and mix well so that the cottage cheese cubes get coated well with the spices.
  13. Add melted butter to the bowl and mix again.
  14. Now take a small cup of Clarified Butter (ghee) and put hot charcoal pieces in it.
  15. Put this cup of charcoal in the bowl of cottage cheese, cover the bowl and keep aside for few minutes. This process will make it smoked and barbecued without the use of a barbecue. If coal isn’t available, you can use the Grill option in a Microwave on the cottage cheese, to come close to the smokey flavour.
  16. Now, for the base, use any kind of regular bread (rectangular shaped, as per the recipe)
  17. Cut off the 4 brown sides of the bread.
  18. Using a rolling pin and board, flatten the bread slices (Like rotis in India)
  19. Once flattened, put a cheese slice between 2 bread pieces like a sandwich. If cheese slice is not available, you can grate regular cheese between 2 bread pieces like a sandwich.
  20. On top of this cheese sandwich, spread the pizza sauce evenly.
  21. Grate lots of mozzarella cheese on the sauce.
  22. Add pieces of the smoked cottage cheese, and your favourite toppings
  23. Top it with some freshly ground pepper
  24. Bake in Oven on 250 C for 5-7 minutes. If you don’t have an oven, heat butter in a pan, place the bread pizza in it once the butter has melted, cover the pan and cook for 5 minutes on medium-low flame till the cheese melts.
  25. Serve hot with Ketchup, Oregano, Chilli Flakes!
