Recipe for Pulao: Rice Cooked in Vegetables and Indian Spices

Ingredients

  • 1 cup basmati rice
  • 1 onion 
  • 3 green chilli
  • 1 tomato
  • 1 tbsp Cumin (Preferably “Shahjeera“)
  • 3-4 cloves
  • 2-3 tbsp oil
  • Chopped beans (50gm)
  • Green peas (to taste )
  • 2 small Carrots
  • 1 potato 
  • Mint leaves
  • 1 bay leaf
  • Salt to taste
  • 1 tbsp chilli powder
  • 1/2 tbsp coriander powder
  • 1 tbsp ginger-garlic paste
  • 5-6 cashew nuts (optional)
  • 10 cubes cottage cheese (paneer)

Procedure

  • Cook the plain rice in a rice cooker or regular cooker
  • Heat 3 tbsp oil in a pan 
  • Sautee 1 tsp cumin,
  • Sautee 4 cloves, 1 bay leaf and 5-6 cashews along with it
  • Add 1 onion followed by 1 tsp ginger-garlic paste and 2 chilli to the pan
  • Continue to stir for 5 minutes until onions turn golden in colour
  • Add 1 tomato (chopped) and sautee until tomatoes turn soft and mushy.
  • Add 1 potato (chopped), 3 tbsp peas, 1 carrot and beans. Sautee for 3 minutes.
  • Add 10 cubes paneer, 2 tbsp coriander powder, 2 tbsp mint leaf, ½ tsp garam masala and 1 tsp chilli powder, 1 tbsp salt (to taste) – Sautee for 2 minutes.
  • Now add the plain cooked rice to the pan and mix well with all the sauteed ingredients.
  • Serve hot with a side of yoghurt/curd flavoured with cumin powder.
