Ingredients
- 1 cup basmati rice
- 1 onion
- 3 green chilli
- 1 tomato
- 1 tbsp Cumin (Preferably “Shahjeera“)
- 3-4 cloves
- 2-3 tbsp oil
- Chopped beans (50gm)
- Green peas (to taste )
- 2 small Carrots
- 1 potato
- Mint leaves
- 1 bay leaf
- Salt to taste
- 1 tbsp chilli powder
- 1/2 tbsp coriander powder
- 1 tbsp ginger-garlic paste
- 5-6 cashew nuts (optional)
- 10 cubes cottage cheese (paneer)
Procedure
- Cook the plain rice in a rice cooker or regular cooker
- Heat 3 tbsp oil in a pan
- Sautee 1 tsp cumin,
- Sautee 4 cloves, 1 bay leaf and 5-6 cashews along with it
- Add 1 onion followed by 1 tsp ginger-garlic paste and 2 chilli to the pan
- Continue to stir for 5 minutes until onions turn golden in colour
- Add 1 tomato (chopped) and sautee until tomatoes turn soft and mushy.
- Add 1 potato (chopped), 3 tbsp peas, 1 carrot and beans. Sautee for 3 minutes.
- Add 10 cubes paneer, 2 tbsp coriander powder, 2 tbsp mint leaf, ½ tsp garam masala and 1 tsp chilli powder, 1 tbsp salt (to taste) – Sautee for 2 minutes.
- Now add the plain cooked rice to the pan and mix well with all the sauteed ingredients.
- Serve hot with a side of yoghurt/curd flavoured with cumin powder.
